I recently had a fascinating discussion with a client grappling with low dining capture, even at breakfast. It sparked a crucial question: What can hotels do to genuinely increase the percentage of guests dining in their bars and restaurants?


Hotel F&B is not just an amenity or a place to serve breakfast.

I believe a better approach is to focus on making your F&B a compelling reason for guests to choose your hotel, and then to dine within it.

The problem of low dining capture isn't just about product; it's about holistic visibility, seamless experience, and proactive engagement at every touchpoint.

Here are some ideas on what can be done at each stage of the guest journey to drive dining capture – and turn your F&B into a true highlight:

Booking Stage: Seamlessly integrate dinner packages or F&B credits as irresistible add-ons. "Book your room and enjoy a complimentary 3-course dinner!"

Post-Booking Email: A personalized touch! "Planning your stay? Reserve a table at our exquisite restaurant via the link below and enjoy a complimentary glass of [signature drink]!"

Cross Training: Front Desk and Concierge employees should receive training and know how to talk about the type of concept, cuisine or signature dishes. Ideally have them to try the restaurant

Check-in: Empower your front desk team! Instead of waiting for guests to ask, proactively suggest: "Welcome! May I make a reservation for you in our restaurant tonight?"

Check-in - The Extra Mile: Imagine a small box with a sample of your showstopper dessert. This is made by our pastry chef right here in the restaurant. Would you like me to reserve a table for you to try more?" A delicious, tangible invitation!

En Route to the Room: Leverage every visible space. Elegant key card holders, captivating visuals in lift cars, subtle digital displays – all showcasing your F&B offerings.

In-Room Experience: Go beyond just a room service menu. Provide a beautiful, comprehensive menu for your full restaurant, including enticing wine and drinks lists. Make them want to go downstairs and experience the ambiance.


Ultimately, your restaurant needs to be more than just "a convenient option"; it must be "a truly great option." This means exceptional food quality, unique concepts, outstanding service, and a memorable atmosphere.
